About the Coffee Farm:
This coffee farm is one of the oldest in Guatemala, where bourbon cultivars are grown under partial shade from avocado trees.
The Rosario plot is located in the municipality of Antigua, surrounded by 3 volcanoes which are visible from the farm. The rich volcanic soil, warm days and cool nights and high winds give Antigua a unique microclimate that is highly sought after by coffee enthusiasts.
How Process Maximizes Flavor:
The fully washed coffees are fermented in water for 24 to 36 hours, pending weather conditions. After fermentation, the coffee is dried for 6 to 9 days on concrete patios.
