The Ayla washing station is operated by the Yonis family and receives coffee from 725 local organic coffee growers near the village of Shantawane.

This natural processed coffee was first hand-sorted, then floated in water to remove any under ripe coffee cherries and rinse the fruit. 

The cherries are next spread out on raised beds and turned at least 5 times per day to ensure even drying for the next 21 days, while the nearby river keeps temperatures cool and brings fresh airflow across the drying beds.
